  • Whole spices:
    • 4 green cardamom pods
    • 4 cloves
    • 2 inch piece of cinnamon
    • 2 bay leaves

Instructions:

  1. Prepare the Rice:
    • Rinse the basmati rice until the water runs clear, then soak for at least 30 minutes. Drain.
    • In a large pot, bring water to a boil, add a pinch of salt and the drained rice. Cook until the rice is about 70% cooked. Drain and set aside.
  2. Marinate the Chicken:
    • In a bowl, combine chicken pieces with yogurt, biryani masala, turmeric, red chili powder, lemon juice, and salt. Let it marinate for at least 30 minutes.
  3. Cook the Chicken:
    • Heat oil in a large pot or deep pan. Add whole spices and sauté for a minute.
    • Add sliced onions and fry until they are golden brown.
    • Add garlic and ginger, cooking until aromatic.
    • Add the marinated chicken and cook until the chicken is browned and nearly cooked through.
    • Stir in chopped tomatoes and cook until they soften.
  4. Layer the Biryani:
    • Remove half of the cooked chicken and set aside. Spread half of the rice over the chicken in the pot.
    • Sprinkle half of the chopped mint and cilantro, and some saffron-infused milk over the rice.
    • Layer the remaining chicken and then the remaining rice. Top with the rest of the herbs and saffron milk.
  5. Cook the Biryani:
    • Cover the pot with a tight-fitting lid. You can seal the edges with a simple dough made from flour and water to trap the steam.
    • Cook on a low heat for about 20-25 minutes to let the flavors meld together.
  6. Serve:
    • Gently fluff and mix the biryani before serving to distribute the layers of chicken and rice.
    • Serve hot with sides such as raita (yogurt sauce) or salad.
